  • Preheat your oven to 175°C (350°F).
  • Mix sugar, cornstarch, salt, and water in a saucepan over medium heat until thickened.
  • Stir in lemon zest and juice. Gradually whisk in egg yolks. Cook for two minutes.
  • Remove from heat and stir in butter. Pour the filling into the pre-baked crust.
  • Beat egg whites and cream of tartar in a bowl until soft peaks form. Gradually add sugar, beating until stiff peaks form.
